The Neu 180 Veg Cleaver is the big boy. Probably the most fun-to-use knife I make, it’s great for smashing garlic with the side of it’s broad blade, chopping through tonnes of veggies and then scraping them up like a big old bench scraper to get them to the pan. It’s not at all like your usual meat cleaver, with a flat grind this is light weight, balanced, thin and precise. Overall it’s Santoku-inspired but with a much deeper blade and a little more length.
I helped Tim clear out some overgrown trees on his section in Whangārei. Using just my big old Stihl chainsaw, I freehand cut a slab from one of the large overgrown apple trees and took it home to dry, eventually it made its way to the handles of a collection of knives for him.
