A modern take on a Santoku with the Tóki signature Neu scale handle design to match the rest of the Neu set. It’s shorter, taller blade and flatter edge mean this is not so much of a rocker like a Chef’s knife but it’s a brilliant slicer. The Japanese name ‘Santoku’ means Three virtues, although I can come up with more than that, this is a super versatile every-day knife, a style preferred by some to the Chef’s knife.
Adam took the fence post that made the scales on this knife from his West Auckland property in the Waitakere Ranges. We don’t know how old the fence post was but I wouldn’t be surprised if it were somewhere between 50 and 100 years old. The exterior was weathered and rough; to begin with we didn’t even know what kind of wood lay beneath or if it’d be in useable condition but when I put it through the planer I was pleasantly surprised to find this beautiful Pururi.
