The Neu Chefs knife is the versatile workhorse in a modern and refined German-style pattern and will be your most used knife in the kitchen. It’s balanced at the heel for precise control in a pinch grip, super sharp and with authority at the heel for tough jobs like cutting root vegetables all day but with a fine grind for a distal taper out to the tip which is thin for precision jobs like slicing garlic.

The Petty might seem much like a paring knife but in contrast where the paring knife is for jobs off the chopping board, the Petty IS made for work on the board. For small odd-jobs – slicing, cutting and dicing when you feel a chefs knife is a little too unwieldy for the job, or for that quick solo lunch you’re throwing together when you don’t want to dirty up your best chefs knife. The blade is a little longer than the paring knife and crucially, it’s deeper and the geometry includes a steeper angle between the blade edge and the handle allowing clearance for your hand so that it can be used on a chopping board.
